There is still on-going debate about the health benefits of excluding animals from your diet. We’re not going to go into that today. Our goal is to supply our readers with healthy recipes for the holiday season, regardless of their eating beliefs.

In this post you’ll find recipes that range from loosely vegetarian (includes eggs, for example) to strictly vegan. If you’re trying to convince a friend or two during the holidays this year that getting rid of the meat doesn’t mean getting rid of the taste, you might want to try one of these!

Our first recipe is from The Best Ever Indian Cookbook. If you’re wary about over-powering spices or flavors, don’t be! This dish produces a subtle, aromatic curry.

Going for the festive look? This next recipe is for you. Symphony in Squash is one of the delicious recipes from Zel Allen’s cookbook The Nut Gourmet: Nourishing Nuts for Every Occasion. And it’s strictly vegan.

We recently shared one of our member’s WellnessFX experience and thought we’d extend an extra thanks to Debbie by featuring one of her vegan recipes on our blog. Macaroni and cheese is a staple of holiday dinners, and it’s said that cheese is one of the hardest foods for people to give up when going vegan.

After trying out the recipe below, make sure to head over to Live from La Quinta: Tales of a Vegan Athlete to find more vegan recipes tailored to the active lifestyle.

Our last vegetarian dish is a modification of traditional latkes to include less carbs, a key component of the Atkins diet. Whether you agree with the general principles of Atkins or not, the following is mostly made with fresh, unprocessed ingredients.
